Spaghetti Squash with Sausage - Ninja Cooking System Recipe

I always thought that making a meal with spaghetti squash would be difficult.  Something more than I could handle.  Not with the Ninja Cooking System.  This is Spaghetti Squash Made EASY!!  Thats right!  If I can do it,  ANYONE can do it.

1 lb Italian turkey sausage

2 cups water

1 (4 lb) spaghetti squash, cut in half lengthwise and seeds removed

2 tablespoons parmesan cheese, grated

2 teaspoons salt-free garlic and herb seasoning

1 large tomatoes, chopped

1 cup baby spinach leaves, packed

1⁄4 cup mozzarella cheese, shredded



Add sausage to pot.

Cook uncovered for 10 minutes or until browned, stirring often.

Remove sausage from pot. remove grease from pot

Pour water into pot. Place roasting rack into pot. Place squash, cut side down, on rack.

Set OVEN to 425 degrees F for 25 minutes.

Using fork, scrape flesh from squash and add to pot.

Sprinkle with 1 tablespoon Parmesan cheese and 1 teaspoon garlic and herb seasoning.

Top with sausage, tomato, spinach and remaining Parmesan cheese and seasoning.

Set OVEN to 425 degrees F for 15 minutes.

Cover and cook until mixture is hot and bubbling. Sprinkle with mozzarella cheese.
